Gazpacho!!!!

Made some last week. Apologies. Forgot to post.

Started here:

2 cucumbers (seeded--if you don't know how to seed cucumbers--cut in half, lengthwise then use a spoon to scrape out the seeds--simple)
A bit of basil
6-7 tomatoes
1-2 cloves of garlic
1 bell pepper
olive oil
salt to taste

Chunked all veggies and added them to a food processor then dumped into the bowl. I added shredded red cabbage (it was in the fridge) for good measure. Then refrigerated it for a couple of hours. Served it with bread.

I like my gazpacho chunkier, however if you like yours more like soup you may want to use a blender. It's something healthy to have when it's too hot to cook. Additionally, you can switch out ingredients. I once used watermelon instead of tomatoes, for instance.
